Healthy Parmesan Chicken

I'm sure someone somewhere has already come up with a recipe similar to this one...but the other day I had bought some chicken and did not know what to do with it (felt like I needed a change from my usual chicken recipes). So I looked around to see what I had in the kitchen, and decided to make this delicious recipe:


  • 4 Chicken breasts, boneless & skinless
  • 1 cup fat-free mayo
  • 5 TBS Parmesan cheese
  • 5 cups broccoli - fresh, washed & cut into bite size pieces
  • 1/2 tsp salt, pepper, chili flakes - Optional

  1. Heat oven to 350 degrees
  2. Line a cookie sheet/ tray with parchment paper
  3. Mix mayo & Parmesan cheese
  4. Sprinkle chicken breasts with salt & pepper & chili flakes (optional)
  5. Spread broccoli florets on the parchment paper
  6. Place chicken breasts over broccoli
  7. Sprinkle with salt, pepper & chili flakes
  8. Pour mayo mix over chicken and spread evenly
  9. Place in oven for 50-60 minutes, checking occasionally on the cheese so it doesn't burn
  10. Enjoy with a side of salad or quinoa!
