Healthy split-pea & turkey sausage soup

Ingredients:

  • 3 cups water
  • 1 cup dry split peas
  • 1 large red onion
  • 2-3 stalks of fresh leek
  • 2 medium potatoes
  • 2 medium carrots, shredded
  • 3 cloves of garlic
  • 1 bunch of fresh parsley
  • 1 box (907g) of organic fat-free chicken broth
  • 2 extra lean turkey sausages
  • salt, pepper and chilli flakes to taste (but needs at least 1 tsp salt) 
Any SAUSAGE would do, but I choose lean turkey SAUSAGES as they contain less fat and are full of nutrients.

Cooking Method

  1. Dice onions and garlic 
  2. wash and chop parsley
  3. cut uncooked sausage in 1 inch slices (not too thick but not too thin either)
  4. put everything in the slow cooker on high for 6hrs (basically make it in the morning and forget about it all day. It'll be ready in the evening just in time for supper). 
  5. Stir and serve while hot. You can save the rest for another day or even freeze it and enjoy it on a cold autumn day.
